Our Process
Grown in the Highlands of Jalisco
This is where it begins.
Our Blue Weber agave is cultivated in Los Altos, the Highlands region known for mineral-rich red soil and naturally sweeter agave. Each plant grows for years before harvest, reaching full maturity under the Mexican sun.
The longer the agave matures in the field, the more character it brings to the glass.
Slow-Cooked the Traditional Way
After harvest, the agave is cooked in masonry ovens for 24 hours, then rested for another full day.
Slow cooking draws out natural sweetness while preserving the plant’s integrity. Industrial shortcuts can accelerate this step, but they often introduce harshness. Patience here protects the flavor developed in the field.
Fermented with Time and Care
Once cooked, the agave is crushed through a four-step milling process, then fermented in stainless steel tanks for 144 hours.
We keep the agave fiber, known as bagasso, in the tanks during fermentation. That choice adds body and depth. It takes longer, but it creates a fuller expression of agave rather than a stripped-down spirit.
Distilled for Purity and Balance
Our tequila is double-distilled in copper stills using precise heart cuts.
Copper helps remove impurities while refining texture. After distillation, the Blanco is proofed with deep-well water purified through reverse osmosis, then rested before bottling.
Clarity is earned, not corrected later.
Rested in American Oak
For our Reposado, the tequila matures in 200-liter American oak barrels.
Time in oak softens the edges and introduces subtle layers of vanilla and spice. The barrel should support the agave, not overpower it. Aging is refinement, not disguise.
