Our Process 

Real tequila comes from real craft. 

Every bottle of EGO begins in the Highlands of Jalisco, Mexico, where mature Blue Weber agave grows in mineral-rich red soil. We partner with NOM 1414, a distillery recognized for its commitment to traditional methods and consistency. The result is tequila made with patience, clarity, and respect for the agave — never shortcuts. 

 

Grown in the Highlands of Jalisco 

Our agave comes from Los Altos, the Highlands region known for producing agave with naturally higher sweetness and fuller character. Each plant grows for years before harvest, reaching full maturity under the Mexican sun. This is where the flavor starts. 

 

Slow-Cooked the Traditional Way 

After harvest, the agave is cooked in masonry ovens for 24 hours, then rested for another full day. Slow cooking draws out natural sweetness, preserves the integrity of the plant, and avoids the harshness that comes from rushed industrial methods. 

 

Fermented with Time and Care 

The cooked agave is crushed through a four-step milling process, then fermented in stainless steel tanks for 144 hours. We keep the agave fiber (bagasso) in the tanks, which adds body and depth. This approach takes longer, but it creates a richer expression of the agave itself. 

 

Distilled for Purity and Balance 

Our tequila is double-distilled in copper stills using clean heart cuts. Copper removes impurities and creates a cleaner, smoother spirit. After distillation, the Blanco is proofed with deep-well water purified by reverse osmosis, then rested before bottling. 

 

Rested in American Oak 

For our Reposado, the tequila matures for six months in 200-liter American oak barrels. The barrels soften the edges and introduce light layers of vanilla, oak spice, and warmth without overwhelming the agave. It’srefinement, not disguise. 

 

Nothing Added. Nothing Hidden. 

Our tequila is made with agave, water, and time. No additives, no flavorings, no colorants. Purity isn’t a trend for us. It’s the standard.
